Flour tortilla









Tortilla means little cake in spanish. They are one of the main components of a number of Mexican dishes like quesadilla, burrito, enchiladas etc . It is served in various forms like rolled, layered and even folded. It is very similar to Indian flat breads or roti. It differs only in its preparation which involves a lot of resting time. Tortillas can be made with corn, whole wheat and all purpose flour. This recipe uses all purpose flour.





INGREDIENTS
makes about 8 tortillas


  • All purpose flour - 2 cups
  • Milk - 3/4 cup (luke warm)
  • Vegetable oil - 2 tsp
  • Salt - 1 tsp
  • Baking powder - 11/2 tsp

  1.  Combine all the ingredients in a bowl and knead to get a firm, soft dough.
  2. Cover the bowl containing the dough with a damp cloth and rest it for 20 minutes. (To get soft tortillas it is important to rest the dough)
  3. Take the dough and divide it in to eight equal parts, roll them into balls and cover with a damp cloth.
  4. After resting it for 10 minutes, roll them into thin tortillas using a rolling pin. Dust it with flour to prevent it from sticking. Keep them covered with damp cloth till you cook them.
  5. Heat a skillet or tawa. Place the tortillas and keep flipping every 10 seconds till they get cooked both sides. Cook in high heat but do not overcook. Brown spots will form when it is done. If you cook it in low flame for a long time it will become crisp and will not be soft.
